Appetite for Life: You have a lot of close friends in the food biz. Do you think it’s important for chefs to stick together —and if so, why?
Andrew Zimmern: The work is hard and the hours are long, and while the fetish of celebrity chef worship has made for a whole generation of entitled “gimme fame now” wannabe culinarians, the best and the brightest still recognize this is a team sport. They still want to support their friends and make a difference for their communities, understanding that nurturing the food community — as opposed to the single restaurant or chef — is all that matters. The hospitality industry and chef community succeeds or fails as a whole.
What is your favorite food-drink pairing?
Szechuan food and Orange Crush soda. Match made in heaven.
What’s the most innovative thing you’ve seen coming out of the culinary world this year?
Completely self-sustaining restaurants. They may not be making their own silverware, but places like Herbsaint in New Orleans are now raising their own animals for the restaurant. That’s an amazing statement and a real success story.
